Traditional East African Tea
Makes 1 1/2 quarts
• 1/4 cup grated ginger (about 3 inches of ginger , unpeeled)
• 1/4 cup black tea (decaf, if desired)
• 1 quart water
• 2 cups milk
• 1/4 cup sugar (or to taste) Directions: Put water in a pot or kettle and bring it to a happy bubble.
While the water heats, grate the ginger.
I used about 1/3 of this root, skin and all.
Sometimes ginger can be a bit hairy and fibrous.
No worries. Even hairy ginger is good for tea.
Add the ginger and black tea to the boiling water.
Simmer for 3-5 minutes.
Next, add milk and sugar.
Return to a simmer and let bubble gently for a minute or two,
until the sugar dissolves.
I find that 1/4 cup of sugar is just right for a moderately sweet,
chilled drink. Add less if you're serving the tea hot as the sweetness
is stronger in hot liquid.
Strain the tea and serve hot, hot, hot
- African Fried Banana Dessert
• 6 bananas, well ripened
• 1 cup flour
• 1/4 cup sugar
• 1/4 cup water
• 1 teaspoon nutmeg
Mash bananas with a fork or use blender to make into a pulp.
Mix water and sugar to make a syrup.
Add syrup and nutmeg to bananas and flour
(add more water, if needed, to make batter approximate
In an oiled skillet, fry like pancakes until golden brown.
